Two years ago, my Mom and I started A Pierogi Lady. For me, it was going to be a way to buy some things I wanted. For my Mom, it was a entrepreneurial lesson for her 15 year old son. Mom started by reminding me of how my grandmother used to describe pierogi. "Pierogi are small folds of dough that are stuffed with all kinds of different fillings." A Polish original, pierogi harken back to a simpler time when the Polish baker would spend all day carefully making dough and fillings to serve customers. Grandma Okulewicz used to make thousands of pierogi for the entire family to eat. And there were a lot of us! I remember helping her in the kitchen as she rolled the dough out and cut it to exacting sizes (Grandma relegated me to filling duty when I couldn't cut to her specifications). Every single part of the pierogi was handmade, folded over itself with my own little fingers. So, that's where we started, with Grandma's special recipe.
Mom was unrelenting in her lesson. She made me do market research to see if (a) our product was something that Polish people liked and (b) if they would buy it. Since I attend a high school of Polish descent, testing the market was easy! Almost everyone I approached related fond memories of their mother's pierogi...it was then that I realized that pierogi was the ultimate "comfort food" for people of Polish descent. Once I got the "thumbs up" on my market research, it was time to go to work and truly establish our business.
A Pierogi Lady has expanded since our beginnings to include delicious chocolate offerings. Our chocolate confections began with our chocolate pierogi. Our three piece chocolate pierogi wedding favor has been a tremendous hit! We have had many Polish brides that loved the affordability and uniqueness of our chocolate pierogi favor!
